USE YOUR CHRISTMAS LEFTOVERS TO MAKE THIS DELICIOUS, HEALTHY TURKEY CAESAR WRAP. THE NO-EGG CAESAR DRESSING ADDS NEW LIFE TO LEFTOVER ROAST TURKEY.
I’m going to be straight with you, I’m already thinking about Christmas leftovers. Am I the only one? I am sometimes more excited for the leftovers than the actual meal. But then again, we all know I love me some leftovers. And Christmas leftovers are the ultimate. Roast turkey, glazed ham, stuffing. Are you drooling yet?
I usually revert to the good old leftovers sandwich the day after Christmas but this year I thought of something lighter, a little healthier but no less delicious. Because let’s be honest, we all need to be eased into post-holiday eating gently. I can’t go from chocolate, roasts and treats galore to salads and water. Come now. This wrap is the perfect bridge between indulgent festive feasting and a much healthier, lighter you. You could of course go completely low-carb and cut out the wrap all together but we’re crossing a bridge here people. Let me have this one.
The Caesar dressing is a much healthier alternative to the oil-heavy version you’re used to and is 100% inspired by Jamie Oliver’s Caesar dressing. It is made with yoghurt (use any plain yoghurt you want here), anchovies (duh!), Parmesan (double duh!), garlic, Worcestershire sauce and lemon. It is so moreish. And actually, even a little better than the classic in my opinion.
To add back lots of green nutrition, I bulked my wrap out with lettuce, cucumber and avocado but feel free to use any vegetables you wish here. Even a little bacon wouldn’t go amiss. The best part though is the fact that this wrap will take you all of 10 minutes to put together from start to finish which means you can get back to doing as little as possible post-Christmas day. It’s a win-win all around!
- 1 cup Caesar dressing
- 2 cups leftover roast turkey/roast chicken, shredded
- 2 large wraps/tortillas
- salt & pepper to taste
- Combine the Caesar dressing with the shredded turkey/chicken.
- Season to taste.
- Heat the wraps/tortillas to make them more pliable (I just do this in a warm pan) then add the lettuce, turkey/chicken and vegetables.
- Tuck in the sides and roll into a tight wrap.
- Slice in half and serve.
